I was at Costco awhile ago and saw sun dried tomatoes and pine nuts that looked so good, I just couldn't resist them. I got them home and they sat in the pantry for a few weeks until I could figure out what to do with them! I got desperate a dinner time one night, and this is what I came up with. It was delicious, and I think every ingredient I used for dinner came from Costco. I love that place!
Toss the following:
1 Package bow tie pasta, cooked and drained
2 Cooked chicken breasts, sliced
Sun dried tomatoes
Toasted pine nuts
olive oil
Top with freshly grated Parmesan and Roasted Garlic & Mediterranean Sea Salt
Enjoy!
I served this with roasted asparagus, and topped it with the sea salt as well. It was delicious! I love this salt grinder. I use it a lot when I cook salmon.

Looks real good and quite sophisticated as well. I need to get a Costco membership now. Everyone recommends getting stuff from there.

Delicious! I'd better get myself to Costco. I don't know how it is in Utah, but it is a zoo here and I put it off for weeks and weeks at a time. Pretty lame, I know. Thanks for sharing!
